配料:姜,蒜,苦瓜盘饰
调料:盐,白糖,胡椒粉,鸡汁,淀粉
鱼刻一字刀,细一点,用盐,胡椒粉,腌渍十分钟。姜切细丝,蒜切片。
鱼拍淀粉,拍均匀。下六成热油,中火炸微微黄。
1,炸好的鱼捞出来。
2,油全部倒掉,底下的渣滓不要倒出去。把姜,蒜放进锅里炒一下,放甜辣酱,要多一些,半饭碗的样子。一汤匙番茄酱,一茶匙白糖,中和一下甜辣酱的味道。搅拌均匀,炒一下。
3,兑一碗水,大火烧开。放入鱼。用勺子把汤舀起来浇上去,晃动锅,小火煮一分钟,反面,再来一分钟,捞出来!
4,鱼捞出来摆在盘中。
5,锅里的汁大火熬,并尝尝味道,调入盐,鸡汁。熬到变少,变浓郁粘稠,就好了。
6,浇在鱼身上。
