玄妙:就在于棒打这道程序,捶打用力要均匀适中,就象给鸡肉做按摩一般。力道太轻锤不松,不能让鸡肉纤维组织疏松,咀嚼起来就会不化渣;太用力会破坏鸡肉原有的组织结构,吃起來就会软绵绵的,失去了肉的韧性。总之,就是要让那块结实的肌肉在不断轻锤慢敲中,形销而魂不散。
